I regret not having a photo for this recipe! Please take my word on this… not only did it taste great but it looked amazing as well!!
I’ve found that if you take some of your favorite spices, garlic and red onion that it’s not all that hard to change your diet to Vegan!!
Ingredients
1 pound of Kale – stems removed and cut into strips
2 tablespoons of Olive Oil
1 small Red Onion – thinly sliced
1 Garlic Clove – minced
Pinch of Dried Hot Red Pepper Flakes
1 tablespoon of Red Wine Vinegar
1/4 teaspoon of Salt
What you do:
Cook kale in a pot of boiling salted water, uncovered stirring occasionally for about 10 minutes. Drain and set aside
Heat oil in skillet over medium/high heat and add onions. Stir occasionally until softened 5-8 minutes. Add garlic and red pepper flakes and cook for another minute. Reduce heat and add kale to skillet for another 5 minutes until well mixed and heated.
Remove skillet from heat and add red wine vinegar and salt and stir.
That’s it and you’ve got yourself a nice addition to you dinner! I’ll be sure to post some pictures next time I make this, I was so excited and too hungry to take the minute to flash a photo!!
